Red Thai Curry Soup

I have to tell you, that dish you see? That is what I ate this evening. I knew it was going to be savory so I went ahead and made enough for leftovers. All the colors, aromas, and flavors just stay with you and keep you warm. There’s nothing like a good curry soup. From the fresh cilantro to the burst of lime, the onion and the coconut milk, they add intensity with each bite. You must try this recipe, especially if you’re a fan of curry. It’s really very easy to make, takes about 30 minutes. You really save money on this one.

For 8 servings, you will need:

  • 4 Tb Oil
  • 2 Tb Ginger (grated)
  • 5-6 Cloves of Garlic (minced)
  • 4 Tb Thai Red Curry Paste
  • 2 Sweet Potatoes (1 inch dices)
  • 2 Baby Bok Choy (divided)
  • 8 c. Broth
  • 26 oz. Coconut Milk
  • 2 Tb Soy Sauce
  • 8 oz. Bag of Vermicelli Rice Noodles
  • 1/3 Small Red Onion (chopped)
  • 2 Limes (sliced)
  • Handful Fresh Cilantro (chopped)
  • Sriracha (optional)

Directions:

Put the diced sweet potatoes into a medium mixing bowl. Remove the base of the bok choy and cut where the leaf begins to turn green. Set the green tips aside, you will use them later. Cut the remaining leaves into 1 inch slices and add them to the sweet potatoes. Make sure you have broth nearby.

Now grate the ginger, mince the garlic and set aside in a small bowl. Heat the oil in a large soup pot adding the ginger + garlic + curry paste when it’s ready. Cook for 2 minutes.

Add the baby bok choy + sweet potatoes + broth and bring to a boil. Turn heat to low and let it simmer 5 minutes. Make sure to taste the potatoes to see if they tender. Now it’s time to make the vermicelli.

Cook the rice noodles in boiling water for 2-3 minutes or to the bag’s instructions. Drain, rinse with cold water, then drain again.

IMG-1226_editedthaisoup.jpgAfter soup has simmered for 5 minutes, add the coconut milk + soy sauce + brown sugar to the soup. Stir, taste, and add more soy sauce or sugar to taste. Toss in the bok choy tips and let them wilt.

Divide the vermicelli into bowls. Ladle the soup onto the noodles, then garnish with red onion + cilantro + lime. If you like it spicy, add sriracha. And that’s it! Ready to serve! Now enjoy this delicious meal in the comfort of your home.
