Cook Time: 5 minutes.

I’ve recently seen a recipe for olive tapenade that looks so tasty, it made me want to put up my own recipe. Tapenade is so zesty and delicious, there’s no limit to how much of this tapenade you can put on a sandwich. It’s amazing. The flavor just jumps out at you and grabs your attention and leaves you wanting more. What I like most about this recipe is the sun-dried tomatoes and the fresh basil. So whether you’re making an appetizer or a delicious Italian pressed sandwich, olive tapenade is the way to go for all you olive lovers out there. Enjoy!

For 2 cups of Tapenade you will need:

  • 2.5 c. pitted olives   * I chose a few different kinds
  • 2 Tb. Capers
  • 2 Tb. Sun-dried Tomatoes (chopped)
  • 1 Tb. Fresh Garlic (chopped)
  • 1 ts. Oregano
  • 4 Tb. Fresh Parsley (chopped)
  • 1 Tb. Fresh Basil (chopped)
  • 1 Tb. Lemon Juice (about 1/2 a lemon)
  • 1/4 c. Extra Virgin Olive Oil
  • Black Pepper

You will need a food processor for this recipe. There are a few ways you can make it, based on what type of texture you like and how you are serving it.

Relish – Place all ingredients into the processor and pulse a few times, scrape down the sides, then pulse a few more times.

Chunky – Place all ingredients into the processor and pulse 15 times, pausing to scrape down the sides a couple times.

Spread (most popular) – Place all ingredients into the processor and pulse until a paste is formed.

Shelf life is about a week.

Olives are so good for you! Did you know that they are a natural probiotic, so are tremendously healthy for your digestive system. They provide tons of antioxidants, lower cholesterol and high blood pressure, are a natural pain remedy and used in the treatment and prevention of cancer. They really boost your heart health and lower the risk of Diabetes and obesity.  They help fight infection and help prevent Osteoporosis. Kalamata olives are my favorite, but I’m not picky, I love them all!
