
Before I made this recipe I had no idea if blueberries and lemons would go well together, I was just playing around. I thought they would, and as it turns out, it’s amazing! One thing I like the most in this recipe is the grated ginger. It really balances and accentuates the flavor. It only takes a few minutes to make and you can stick it in the freezer for later if you want! Each serving is only 67 calories!
You will need:
- 3 c. Blueberries
- 1/2 c. Water
- 2 Tb Raw Unfiltered Honey
- 1 ts. Lemon Zest
- 2 Tb Fresh Lemon Juice
- 1/2 ts. Sea Salt
- 1 Tb Fresh Ginger (grated)
Directions:
Place all ingredients into a food processor and blend until smooth. Place the mixture in a freezer safe container and freeze for at least 1 hour. Let stand 10 minutes before serving.
