Before I made this recipe I had no idea if blueberries and lemons would go well together, I was just playing around. I thought they would, and as it turns out, it’s amazing! One thing I like the most in this recipe is the grated ginger. It really balances and accentuates the flavor. It only takes a few minutes to make and you can stick it in the freezer for later if you want! Each serving is only 67 calories!
You will need:
- 3 c. Blueberries
- 1/2 c. Water
- 2 Tb Raw Unfiltered Honey
- 1 ts. Lemon Zest
- 2 Tb Fresh Lemon Juice
- 1/2 ts. Sea Salt
- 1 Tb Fresh Ginger (grated)
Place all ingredients into a food processor and blend until smooth. Place the mixture in a freezer safe container and freeze for at least 1 hour. Let stand 10 minutes before serving.
And that’s it! I hope you enjoy it!
Fresh Organic Ginger
Ginger is a beautiful food. Rich and earthy and strong. I use it almost every day, whether its through juicing or incorporating it into a home cooked meal. There’s just so many ways you can use it, it’s amazing. Here are just a few ways ginger can help you from day to day. It fights against nausea and fungal infections. It eases menstrual pains and protects against stomach ulcers. Like most fresh fruits and vegetables it helps inhibit cancer growth. Ginger even regulates blood sugar, relieves muscle and joint pain, lowers cholesterol, improves brain function, aids in digestion, blocks bacterial infections and eases inflammation. That’s a lot! And I haven’t even scratched the tip of the iceberg on ginger root. Take it from me and whether you drink, freeze, or cook it, incorporate this ingredient into your life. Stay healthy.
