Cook Time: 30 minutes.

This dish is so vibrant, so colorful, and filling! Hovering just above 250 calories, it’s amazing just how filling each serving can be. Great as a main dish or side, and packed with protein. In fact, I’ll wager you already have most, if not all, of the ingredients in your fridge or pantry right now. So what are you waiting for! Try it out! 🙂

For 7 servings you will need:

  • 1 Red Onion (chopped)
  • 6 Fresh Garlic Cloves (minced)
  • 1 Orange Bell Pepper (chopped)
  • 1 Red Bell Pepper (chopped)
  • 1 c. White Quinoa (dry)
  • 2 c. Broth
  • 1 can Hunt’s Fire Roasted Diced Tomatoes (drained)
  • 1 can Black Beans (drained)
  • 1 Tb. Smoked Paprika
  • 1/2 Tb. Cumin Powder
  • 3 c. Frozen Corn
  • Salt + Pepper (to taste)

Garnish:

  • 1 Stalk Green Onion (thinly sliced)
  • 2 Limes (1 into juice, the other into wedges or rings)
  • 1 c. Fresh Parsley (chopped)

Directions:

Prep the onion and place in a small bowl. Prep the garlic + bell peppers and place them in a medium bowl.

In a deep skillet heat oil to medium-high heat. When ready, sauté the onion for 5 minutes or until translucent. Then add the garlic + bell peppers and cook for 2 minutes.

While these are cooking, you can prep the lime + green onions + parsley and put each into their own tiny bowl. This way the garnish is ready for you as soon as the dish is finished.

Next, add the broth + dry quinoa + diced tomatoes + black beans + corn + paprika + cumin + and 1/2 of the prepped parsley to the skillet. Bring to a nice simmer, cover and cook for 20 minutes or until quinoa is soft. Stir often as you don’t want the quinoa to stick to the bottom of the skillet.

Once the quinoa is soft, remove from heat and add salt + pepper + lime juice and stir to combine. Serve and garnish with remaining parsley + green onions + lime wedges. Enjoy! 🙂
