Cauliflower Rice Stuffed Peppers

Cook time: 50 minutes.

This recipe is perfect for a side dish or as an appetizer! Cook time says 50 minutes, but really the prep time is less than 10 minutes, and the oven is doing all the hard work for you. What’s not to love about this dish? It’s simple, easy and while it’s baking you can be cooking something else! It’s a fail safe if you feel like you have too much to cook on hand, or if you just want something that’s delicious and filling.

Cauliflower can be made or bought. Personally, since I cook so much anyways, I like to buy frozen organic bags of cauliflower rice when I make something like this. Frozen vegetables are picked at the peak of freshness so in many cases, they are more fresh than something that was picked a week ago and delivered to your grocery store. When I took this picture last night I was thinking, Mmmm, this is going to be goood.

For 4 servings (side dish) or 8 servings (appetizer), you will need:

  • 2 Small Bags of Cauliflower Rice (plain or seasoned, whichever you prefer)
  • 2 Bell Peppers
  • Oil + Salt + Spices (if you choose plain cauliflower)
  • 1/2 c. Shredded Cheese   * I used white cheddar
  • Green Onions (thinly sliced)
  • Sprouts (optional)

Directions:

Preheat over to 375°

If your cauliflower was bought in the frozen section, cook to specified time (usually around 6 minutes). If you made it yourself, mix with as much oil + salt + spices that you need. Slice the bell peppers in half, remove the core and seeds.

Stuff with cauliflower rice mixture. For me, two small bags of cauliflower rice filled 4 halves just like you see in the picture. Once stuffed, bake in the oven for 40 minutes. Bake for 35 minutes if you like a crispier pepper, or 45 minutes if you would like it to be softer.

After 40 minutes, if you want, add cheese on top, then broil on high for 5 minutes. Start checking it around the 4 minute mark, you don’t want to burn them!

After 4-5 minutes, remove from oven and if you are using them as a side dish, they are ready to be served. If they are an appetizer, then cut length-wise in half and they will be ready to be served. Either way, before they hit the table, garnish with green onion and sprouts if you like. It adds extra color and texture to the meal.

And that’s it! No hard work at all and you’ve got a delicious dish. Enjoy!
