Middle Eastern Salad


Cook Time: 20 minutes.

I love the diversity of this dish. Would you like a nice crisp salad or side? Would you like a topping for seafood or hummus or even a dip by itself? It’s practically good on anything and so deliciously powerful and full of raw nutritious goodness. So simple to make and tasty!

For 8 servings you will need:

  • 2 Tb. Avocado Oil   * or olive oil
  • Juice From 1/2 Lemon
  • Zest From 1 Lemon
  • Salt + Pepper (to taste)
  • 1/4 c. Fresh Parsley (chopped)
  • 1/4 c. Fresh Cilantro (chopped)
  • 1 Yellow Bell Pepper (finely diced)
  • 1 Red Bell Pepper (finely diced)
  • 2 Cucumbers (finely diced)
  • 1 c. Red Onion (finely diced)
  • 4 Roma Tomatoes (finely diced)


Add all ingredients into a large bowl and mix thoroughly. Garnish with extra lemon zest if you desire. Enjoy!
