Mediterranean Sandwich

Cook Time: 5 minutes.

This is one of the best sandwiches I have ever eaten, seriously. It’s full of flavor and I love that satisfying crisp texture of the cucumbers and onion. Super healthy and under 350 calories, this is great if you want a quick snack or as the main portion of a pleasant lunch. Absolutely delicious!

For 2 sandwiches you will need:

  • 4 Slices of Bread   * I used Ezekiel bread
  • 2 Tb. Basil Pesto
  • 2/3 Medium Avocado
  • Salt + Pepper
  • Red Onion (thinly sliced, to taste)
  • Cucumber (12, thinly sliced rings)
  • Roasted Red Pepper
  • Fresh Collard Leaf (thinly sliced, 1 inch long strips)   * Or any greens you like
  • 2 Kalamata Olives
  • 2 Tb. Balsamic Vinegar

Directions:

In a small bowl, mash the avocado. Add a sprinkle of Salt + Pepper, to taste. Set aside.

Prepare the Collard Leaf + Red Onion + Cucumber. Set aside.

Toast the bread to your liking, then on one slice, spread 1 Tb. Pesto. On the other slice, spread half of the avocado mixture.

Assemble by adding the collard + red onion on the pesto side. Add the cucumber to the avocado side. Place one kalamata olive in the center of the cucumber and drizzle with 1 Tb. of balsamic vinegar.  Add the roasted red pepper.
