If you are looking for a simple, nutritious side dish, this is it. It takes minutes to have ready and its taste is flavorful. The sun-dried tomatoes and artichokes really make your mouth water. A little salt and pepper and this dish is ready to be a colorful addition to any meal. I never get tired of this one.
For 4 servings you will need:
- 10 oz. Fresh Spinach
- 1/2 c. Artichokes (chopped)
- 1/2 c. Sun-dried Tomatoes (chopped)
- 8 Fresh Garlic Cloves (whole)
- 1 Tb. Oil
- 1/8 c. Vegetable Broth
- Salt + Pepper (to taste)
Directions:
Heat the oil + broth to medium-high in a deep skillet. Once heated, add the garlic + sun-dried tomatoes + artichokes and stir often until garlic begins to brown.
Turn heat to low, add salt +pepper, and stir in the spinach until it has begun to wilt, then remove from heat. Now it’s ready to enjoy!
