Spinach Artichoke Sun-dried Tomatoes

Cook Time: 8 minutes.

If you are looking for a simple, nutritious side dish, this is it. It takes minutes to have ready and its taste is flavorful. The sun-dried tomatoes and artichokes really make your mouth water. A little salt and pepper and this dish is ready to be a colorful addition to any meal. I never get tired of this one.

For 4 servings you will need:

  • 10 oz. Fresh Spinach
  • 1/2 c. Artichokes (chopped)
  • 1/2 c. Sun-dried Tomatoes (chopped)
  • 8 Fresh Garlic Cloves (whole)
  • 1 Tb. Oil
  • 1/8 c. Vegetable Broth
  • Salt + Pepper (to taste)

Heat the oil + broth to medium-high in a deep skillet. Once heated, add the garlic + sun-dried tomatoes + artichokes and stir often until garlic begins to brown.

Turn heat to low, add salt +pepper, and stir in the spinach until it has begun to wilt, then remove from heat. Now it’s ready to enjoy!

Is there any end to all the fruits and vegetables we can eat that fight cancer? Artichokes are no exception. They have tons of antioxidant power that helps prevent it, and they fight cardiovascular disease too! They’re an excellent source of fiber, which helps with weight loss, plus they help control diabetes. Did you know that they are actually a great source of iron? That means they help prevent anemia. They also improve the appearance, and health, of your skin. Plus, they’re just plain tasty! What’s not to love?
