Oh my… that looks delicious. Being vegetarian was never easier than this. This little recipe packs a punch filled with flavor that will make your taste buds soar. So easy too! For 10-12 servings you will need:
- 2 Mangoes
- 1/2 Red Onion (finely diced)
- 1 Red Bell Pepper (diced)
- 1 Lime (juice)
- Handful of Cilantro (chopped)
- 15 oz. Black Beans
- Salt + Pepper (to taste)
- Salsa
- Sriracha
- 10-12 Tortillas
- 2 Avocados (diced/optional)
Directions:
Put the mango + red onion + red bell pepper + lime juice + cilantro + black beans in a medium bowl. Add a few moderate pinches of sea salt, to taste. Mix well, then add the avocados if you choose to. Stir gently.
Serving size for the filling is around 1/2 cup. You can also add sour cream, salsa, or sriracha if you like it hot. It’s also best if the tortillas are heated up in a skillet first, but they are delicious either way. The nutritional label will include a dollop of sour cream, the salsa, sriracha and the avocado.
